I love stuffed peppers – Barry tolerates them – Annie only eats the middle. So, when I was thinking about dinner, stuffed peppers seemed like a logical choice. Ahem. The original recipe was from Taste of Home, but I tweaked it just a little bit. They were SO GOOD! Barry said they ranked about an 8 in the “stuffed pepper” category, but not that high in the “food” category. Everyone’s a critic. The peppers were so tender after being cooked in the crock that they just melted in your mouth – pure yumminess. Ahhhh. Leftovers are bliss. [Read more…]
Crock Pot Beans and Rice
We really love beans and rice……rice and beans. And it’s not because they’re cheap either. We just really love beans…..and rice. It’s just a nice perk that they’re cheaper than meat. We have beans at least one night per week and sometimes more than that. If you eat here, more than likely you’ll have beans or pasta. Wanna come to dinner? I attempted to set out and create my own beans and rice recipe just for the crock pot……and the result was good. There were a few changes I’ll make next time, but I’ll note those for you. I mess up a lot – so therefore I make lots of recipe notes. It’s how I roll. [Read more…]
Mom’s Salisbury Steak
When I came home from the hospital with Annie, I was hungry. I stayed hungry the entire time I breastfed her. I ate more when I breastfed than when I was pregnant. When my mom asked what I wanted her to bring over to eat, this was the dish I asked for. And I wanted to eat it all……but I shared with Barry. Now, that’s love. This isn’t your normal Salisbury Steak. It’s topped with barbecue sauce and I LOVE it! It makes great fixings for a sandwich too. Yum. I’m hungry. [Read more…] |
Crock Pot Pizza Pasta
Annie has never been a big fan of pasta…..which is really sad because Barry and I are VERY big fans. However, the older she gets, the more she will eat. When she was young, I’d try to trick her and put some in her mouth when she wasn’t looking. After one puke, I stopped that. I’m glad she’s getting more into eating it. When we have company, I usually make pasta. It’s relatively cheap, crowd pleasing, and usually pretty easy. Combine that with a crock pot and you’re really saving some time and money! Let’s make some Pizza Pasta (P.S. – Annie did eat several bites!). [Read more…] |
Crock Pot Cowboy Beans
I love beans. Sometimes, I think beans get a bad reputation. Sure, they make you musical and you can start your own band, but they also have the magical power to clean you out and fill you up. Not many foods are like that.
If I eat a big bowl full of beans, they keep me satisfied for a long time. We’re a bean-loving family. When I ask Annie what she wants to eat for dinner, (just for fun) she always says “Bean!” Beans, beans, good for your heart. *Cough* [Read more…]
Crock Pot Whole Baked Chicken
I have a confession – I used to be afraid of whole chickens…..whole dead chickens. Well, I guess I might be afraid of a live chicken too if it was to run after me, trying to peck me to death.
I mean, in the packaging it looks so…..chickenish. It really looks like a chicken. I mean, there are legs and wings and body parts. When I open a pack of steak, it doesn’t look like a cow. With the chicken, I feel like I need to apologize while I’m fixing it. Sorry bird, but you are quite tasty. Not to mention I have this weirdness about meat on the bone that I’m trying to overcome.
So, I set out to teach myself to cook a whole chicken in the crock pot. I read tons of recipes, and this method suited me the best. And guess what? It’s EASY! I love it! The meat is so tender and it just falls off the bone. This is my method for cooking chicken forever! This particular chicken is from Earth Fare.
After watching Food, Inc I can’t buy any more Tyson chicken. This chicken was $10, but let me tell you…..it was GOOD. Totally worth the $10 and knowing it came from an okay source – and plus, I got 3+ meals out of this 3 pound bird. It did not die in vain…..it died somewhere, but not in vain. [Read more…]
Crock Pot Chicken Fried Steak
Chicken Fried Steak is to the South like “Eh” is to Canadians (okay, I’ve never been to Canada, but Barry has and I think the analogy works). You cannot separate them. And buddy, does this family love Chicken Fried Steak. Yummo! So, I wanted to make some in the Crock Pot. They turned out fabulous but the next time I’ll do them a tad bit differently. I made the mistakes in advance for you. You’re welcome. You’ll need minute steak (also known as cube steak), flour, salt, ground mustard, garlic powder, oil, cream of chicken soup, and water. You could serve this dish over mashed potatoes or rice. We just had mashed potatoes on the side. I like to dip stuff. Yeah, it’s a disease. [Read more…] |
Crock Pot Mushroom Beef
I love cooked mushrooms, especially ones that are found on the lions mane recipes description. Cooked. I don’t really care for raw mushrooms. I would love to tell you why…..but I don’t know. So much of my life makes no sense at all. Kind of like how I am freaked out by meat on the bone. I saw this recipe by Betty Crocker and I knew I had to give it a shot. I am SO glad I did! It was so delicious. Barry really, REALLY enjoyed it. Okay, so I enjoyed it too. Okay, so I licked my plate when I was done. Gravy should never be wasted. Can I get an “Amen!”? [Read more…] |
Crock Pot Chicken Fajitas
Oh. My. Word. These are amazing. Actually, amazing doesn’t even cover it. They are stupendous! Spectacular! Dreamy! Totally Tubular! You want to make these soon. Very soon. In fact, you’re already too late. Gosh, you’re so slow……cooker. Slow cooker, get it? Okay, sorry.
Fried Rice – Barry’s Way
Hey everyone – Barry (the husband) here. I thought for my first guest post I’d be writing something deep and insightful about being a dad, or maybe something useful about my role as a financial counselor – or maybe even something about my woodworking or something else about which I might consider myself knowledgeable. But alas, it is not so. Stacy asked me to write about how to make fried rice. Before you read any further, please know I cannot compete with my kitchen queen of a wife and would never try to get in her way in the kitchen. However, once a week, Stacy gives herself a reprieve from cooking the family dinner, instead opting to sit on the couch with her bonbons and forcing me to go to the kitchen and cook something…or something like that. I have always loved to cook, but I really enjoy this weekly opportunity to remind myself bachelorhood is not for me. Even though I enjoy doing my weekly dinner assignment, I much prefer to enjoy the fruits of Stacy’s labor. Anyway, there is one thing I make that Stacy tells me is better than hers – so let’s make some fried rice! [Read more…] |
