If you’ve never made homemade yogurt before, you’re going to be astounded at how easy it is……really. It’s super easy. You might have tried the recipe I have on here for Crock Pot Yogurt from Heartland Renaissance. I thought it was pretty awesome……until I made this. Now I won’t look back. The thickness and creaminess of this recipe is GREAT! The crock pot is nice if you need to make yogurt and you won’t be able to stick around, but this has become my method of choice. It’s a lot thicker than the version in the crock pot. I looked around at several recipes and finally settled on this one. It’s very easy and makes some really great yogurt. Peanut Butter Kefir Smoothies
We love smoothies here at the Myers house. If I’m going to be making a lot of them, I make a smoothie base and keep it in the fridge (thanks Brandy!). I am always looking for good ways to use up my kefir and get the great benefits of all the probiotics……especially as it’s getting closer to the time of year when sickness abounds. This is one of my favorite smoothies – probably because it has peanut butter in it and I’m a peanut butter fanatic. I’ve used kefir in this smoothie, but feel free to use plain yogurt in its place. Healthy Baked Oatmeal Muffin Recipe
We LOVE Baked Oatmeal around here. In fact, it’s one of the most popular recipes on this website. We eat it at least once a week…..sometimes more if we’re lucky. I like to make it in advance sometimes, especially if it’s going to be a hectic morning and I know I won’t have 30 minutes to wait for something to bake.
We also have to eat on the run occasionally and it would be nice to be able to take Baked Oatmeal with us on those days. It’s pretty easy to eat in its original state, but I thought I could make it even easier……so when I knew I needed a meal on the go, I decided to try muffin cups for the oatmeal. It worked GREAT!!! I’ll be doing it more often. It is very easy to eat in the car.
I used the same recipe, I just poured it into 8 muffin cups instead of the 8 inch pan. The recipe makes 4 servings, so each person could have two…..or like Annie, just one. Actually, I could eat them all myself. I might regret it later though. I used cup liners for ease of toting, but you wouldn’t have to do that if you didn’t have any.
Kefir Ice Cream
We love kefir ice cream in this house! I’m always looking for good, nutritional ways to use my kefir. I came across the recipe for kefir ice cream on Tammy’s Recipes website (one of my favorites!) It’s so good that when we run out, I make more. And the combinations are endless! I hope to keep adding kefir recipes for you guys. Check out the smoothie recipe here in case you missed it. Crock Pot Yogurt
I seriously had no idea that making yogurt could be so easy. I really didn’t know. I feel betrayed and left behind. But now I’ve come into the light! Annie eats lots of yogurt. Barry and I don’t hate it either. It’s pretty yummy stuff, especially over some granola. But, I keep doing this thing where I read ingredient labels at the grocery store…..and then I get mad. And then I start talking to myself. And yes, the stock boy thinks I’m losing my mind. There is tons of junk in the yogurt you buy in the store! It’s true……and it’s dirty. Really, how can you mess yogurt up? And when you see how easy this is, you’ll start making your own. And you’ll KNOW what’s in your yogurt. Crock Pot Stuffed Apples
Ilove apples. That should be very apparent to you by now….hence all the apple recipes like Crock Pot Apple Butter, Baked Apples, and Apple Crowns. I kept seeing tons of apple recipes for the crock pot, but I didn’t really like any of them. So, I sorta came up with my own and it’s delicious! I hate to toot my own horn, but TOOT! TOOT! Homemade Greek Yogurt
Annie can kick back the yogurt. Seriously. Applesauce and yogurt are her two favorite foods. If she even sees it on the counter, you’re a goner. If you had plans for that yogurt in a recipe, you’re outta luck. I’m going to have to start hiding yogurt in a paper bag like it’s liquor or something. And she really, REALLY likes Greek yogurt – but I DIDN’T……have you noticed that it’s a lot more expensive than regular yogurt? But following the fashion of most of my kitchen capers, I decided I would save money and make it myself (also going to show y’all how to make your own yogurt here in a week or so). It’s really very easy and will save you money that you can use at yard sales. |
You’ll need cheesecloth and yogurt. That’s it. Are you surprised? You should know by now that I’m really not into difficult stuff. You can buy cheesecloth just about anywhere. It’s easy to find at fabric stores – mine is from Hancock Fabrics. You can use plain yogurt or flavored yogurt. Our family favorite happens to be plain ole vanilla…..and I’m a Dannon fan. Stacy’s Baked Apples
Man cannot live by bread alone………….but Annie can live by only eating apples. Seriously, this child will eat me out of house and apple. If I’m feeding her apples, I can’t do it fast enough. I ate a lot while I was pregnant, so I guess this is what I get. At least it’s not marshmallows or Snickers. Our house goes through a lot of apples – I usually buy in bulk at the produce market. So, I bake with them a lot. We love baked apples around here, and they are so easy to make! You’ll wonder why you’ve never done it after I show you. Baked Oatmeal
***We’ve adapted this recipe to fit our Whole Foods lifestyle by using sucanat, rolled oats, and coconut oil.***Without a doubt, this is the favorite breakfast in the Myers household. I think I could eat it every day and be perfectly happy. In a perfect world, Baked Oatmeal is on the menu. I’m pretty sure God serves it up in heaven….He’s pretty awesome like that. Do you like oatmeal cookies? Oatmeal Crème Pies? Then you’re in luck, my friend! Today I realized how much oatmeal this house goes through……baked oatmeal, homemade granola, granola bars. We take our fiber pretty seriously. So, I’m going to show you my base recipe today and you can build from that. There are about a million variations you can make with this. How to Make a Smoothie
Did you know there are actually restaurants that only sell smoothies? I still haven’t figured that one out. I’ve never been to one, as I’ve heard they’re pretty expensive. To me, it would sorta be like drinking my money, all blended up. Do you know where that money has been? Eww! Also, I think those smoothies are supposed to sometimes stand in as your meal. What is THAT about? Only a smoothie to eat? Man, I need something else with my drink, like cereal, toast, or waffles. Man cannot live on smoothie alone. I make great smoothies at home, using whatever we have on hand. You can do it too, because it’s SO easy! I’ll go step by step, giving you ideas so you can create your own custom smoothie, and for heaven’s sake please eat a biscuit with it. |
For this demonstration, I made Peanut Butter and Banana Smoothies. Those are two ingredients that are just meant to be together. Soul mates! These are the ingredients that I used if you want to make one just like me (awwww, flattery!): two bananas, two tablespoons of peanut butter, ¼ cup dry milk, two tablespoons wheat germ, one cup of yogurt, and a handful of ice cubes.
