The Basics and Flow of Meal Prep (Kitchen Day)

One day per week, my morning/afternoon is dedicated to Kitchen Day…the time I dedicate to meal prep. I focus on things like: bread, buns, rolls, mixes and seasonings, chopping veggies, washing and cutting fruit, breakfast prep for the week, pantry staples, etc.

I have found that if I take one day per week and dedicate it to cooking and meal prep, it saves me SO MUCH TIME both at breakfast and dinner time. Y’all probably know by now that Wednesday and Saturday are my preferred Kitchen Days, which means on those days, you can usually find me in my apron doing some cooking, baking, and prepping up a storm! We eat most of our meals at home and my kids are hungry a lot, so I always make a ton of food. I get asked often what in the world I do when I cook all this bulk food! Where and how do I store it all? I realize that not everyone will be able to cook as much as I do or have room to store it all! But because bulk cooking and buying health foods in bulk are some of our family’s priorities, I’ve always found a way to store it all.

Kitchen Day: Why I Started Making Broth Again

If you’ve followed me for long at all you know that I don’t like making broth at all. Bone broth – nope, not for me! In fact, because of a pregnancy issue that I had with Andy, I didn’t make for a LONG time – like over 6 years! I had awful morning sickness (the all-day kind) and the smell of cooking broth made me so sick that it took me YEARS to overcome it.

But something happened that changed my mind… I got mad.

I can get pretty hot over a lot of things, but broth is probably a new one. Why did I get mad about broth? Well, I wanted to  incorporate more bone broth into our diet, but when I looked around the shelves, there was sugar in every single bone broth my store carried! Bone broth doesn’t need sugar! What in the world? I had been making broth for years and NEVER added sugar – or even thought about adding sugar. I should add that I’m not anti-sugar… I eat chocolate and dessert on Sundays. So it’s not like I’m totally against sugar.

I just try to stay clear of products that have sugar added for no good reason.

We get enough sugar from our Sunday desserts thank you very much… we don’t need it in our beef broth too. Why couldn’t I find a brand of bone broth that did not have added sugar? This whole “sugar in the broth” experience spurred me to make homemade broth again. And I have to admit, it wasn’t as bad as I thought it would be. Kitchen Tip Tuesday (1/3/12)

I have really embraced my love of coconut oil. I use it for everything: cooking, baking, chapstick, etc. In the winter, it becomes a pretty solid mass since it’s not warm in my kitchen. When I want to dig out 1/2 cup for something, that can be a bit difficult. So, I run some warm water and put my container of coconut oil down into it. After several minutes, it’s warm enough to  scoop and if my water is hot enough, it becomes warm enough to pour.

You could also set your container on your stove if your oven is on – but I’ve found this can take a bit longer.

I don’t just throw that water out when I’m done. I let it cool down and put it into my Berkey Water Filter.

Kitchen Tip Tuesday – 12/27/11

I’m forgetful at this point in my life….I have Momnesia. I can’t remember as much as I used to – especially when it comes to temperatures when I’m using my griddle. My mom’s griddle has a handy-dandy list on it with the temperatures at which you should cook certain foods. So, to save myself a lot of time and Swagbucks searching while trying to cook, I copied my mom’s list down and taped it to the inside of my cabinet door right over where I normally use my griddle. Kitchen Tip Tuesday (12/6/11)

Almost every recipe for baking a cake tells you to bake the cake until it tests done in the center. I have this lovely little Pampered Chef do-hickey that does the job for me. It’s handy to have around. But what if you don’t have one? What if you don’t have a toothpick either? Hey, it could happen. I mean, you could be baking a cake in the hotel – or in the woods – or in the back yard. Of course there aren’t any Pampered Chef cake testers in there…..or toothpicks. What’s a girl to do? Use dry spaghetti! (There is no need to tell me that there is not dry spaghetti in a hotel, the woods, or the back yard.) [Read more…]

Kitchen Tip Tuesday (11/29/11)

I try not to do things that make additional dishes for me to wash. I don’t have a dishwasher (by choice). I AM the dishwasher. Sometimes when I have a pan of bars like this, I can get tired of washing the spatula over and over. Yes, I could put the bars in a different container – but then I have ANOTHER dish to wash. And when we have granola bars, we’re into them all day long. That’s a lot of washed spatulas.

So, I solve the problem by just leaving my spatula in the pan and putting a shower cap over it. I normally use an ugly white spatula, and it doesn’t photograph well…..sorta like me, with my mouth always open. Par. I wash it one time…..so that leaves me time to do other various things like dust. *Cough*
