Crock Pot Trail Mix

Hold on tight to your knickers – I’m about to blow your mind. First, I brought you Crock Pot Candied Nuts. Then, I busted out the big guns and presented Crock Pot Cocoa Almonds. And now I have exceeded awesomeness with CROCK POT TRAIL MIX. I know. I can hardly believe it myself
if it sounds too good to be true, it probably is. Except in this case. This is true, my friends. A true culinary delight.

And if you haven’t figured it out yet, I enjoy saying “culinary delight.” It makes me feel official and stuff. So, expect to see it a lot with all my other favorite phrases: rock my face off, thebomb.com, booya, and don’t eat my chocolate. [Read more…]

Crock Pot German Meatloaf

So, if you don’t have a thing for meat, this might not be the blog for you. Because really; I might be considered meat-obsessed. I get excited over different variations of meatloaf and meatballs. Sincerely excited. And yes, I realize that might be considered slightly pathetic, but that’s okay. I could be obsessed with worse things
like belly button lint or dust bunnies. And this thought just actually occurred to me, but do you realize that if belly button lint is left long enough, it could possibly turn into a DUST BUNNY? Wow. Now that will get you thinking.

But, I digress. We’re talking about meat, right? Yep. I love making meatloaf in the crock pot. If you’ve not tried out my other three versions: Traditional, Sweet Potato, and Cheeseburger, then you don’t know what you’re missing. Meat just makes bellies happy
I’m still thinking about belly button lint now.

Crock Pot Apple Stuffed Acorn Squash

I decided that this year I was going to stock my basement with squash for the winter. So I did. And I’ve been working my way through using them already
and I’ve determined this: they won’t last long. Why? Because I stinkin’ love squash, that’s why. I’m barreling through these babies like a crazy woman. No squash left behind! No squash left unturned! No squash for you! [Read more…]

Crock Pot Tuscan Chicken

This Crockpot Tuscan Chicken is really quick and easy to whip up. Just mix it all together, pour it on top of some chicken in your crockpot, walk away and come back at dinner time.

So, this recipe was born because I bought a jar of sun dried tomatoes – and then I didn’t know what to do with it. So, they sat in my basement for a while
until I almost knocked them off the shelf and broke them. Then I figured it might be in my best interest to use them so that I wouldn’t end up cleaning them off the floor.

I’ve never been to Tuscany – and I’ve never really had Tuscan food. I’m not even sure what makes it Tuscan
garlic? If you know, please tell me in the comments. And I know you do, because I have the smartest readers EVAH! But, I know that a lot of Tuscan recipes call for sundried tomatoes
and so, I call this Tuscan Chicken! Voila!

Crock Pot Pumpkin Gingerbread Steel Cut Oats

I love everything with pumpkin in it, so this crockpot pumpkin gingerbread oatmeal is perfect! It cooks overnight, so breakfast is ready when you wake up!

Let’s cut to the chase here. Since I figured out how to make oats in the crock pot using a water bath instead of cooking them directly in the crock, it’s made my wheels turn a bit. I’ve been dreaming up all sorts of flavors to make – since I can actually get up and eat them instead of using the mixture as wallpaper paste.

This one came to me because, frankly – I like pumpkin stuff. That should be evident by the amount of recipes I post with it
soooooooooooooooo, being frank again (Frank and Pete must be related), if you don’t like pumpkin, you might want to zone out for the next few months and come back to me in the spring. Or when I run out of pumpkin – which isn’t likely to happen. [Read more…]

Crock Pot Chicken Meatballs in Marinara

When I was pregnant with Andy, I was sick for about two months. Everything made me want to puke so I was plastered to the couch for most of the day. Barry either cooked or brought dinner home. It was not a fun two months for the type of person that really enjoys being in her kitchen – it’s my happy place
give me a list and give me my kitchen.

But then I started to feel better, so I immediately thought, “watch out, smoke detector kitchen, here I come!” I got it into my mind that I was going to make this Creamy Chicken Spaghetti from Pioneer Woman. And I’m not gonna lie – even now I look at it and shudder. Well, Miss Smarty Pants thought that she would use ground chicken instead of the chopped chicken it called for in the recipe. [Read more…]

Crock Pot Cocoa Almonds

These Crockpot Cocoa Almonds are so easy and so yummy! All you need to do is cook, stir, cook, and then dump! Then hide them from the kids!

You know those cocoa dusted almonds you can buy at the store? Yeah – they’re stinkin’ delicious.

When I give them to Annie, she acts like I’ve handed her the moon – and I’m the best mommy EVAH. Cool feeling
not so cool of a feeling when they’re all gone though. Bummer.

Also, it’s not so cool when you read the ingredient label. Yeah. Save yourself and don’t read it. Thanks.

I’ll just tell you that you probably don’t want to know what’s in there. DUDE! They’re COCOA ALMONDS
why do you need to add all that other mess??

Couldn’t you save yourself a buck and nix the weirdo ingredients? This is Stacy, trying to save the big companies some cash. You’re welcome. [Read more…]

Crock Pot Spaghetti Squash

So, I’m pretty much obsessed with spaghetti squash. It’s fun to fix and it’s fun to eat. My obsession started about two years ago when I made Spaghetti Squash Casserole for the first time – it’s just been a downward spiral since then. It could be worse. It could be a downward spiral with chocolate and peanut butter. Oh – wait a minute. I have that too.

I’ve already showed you guys via video how I normally prepare a spaghetti squash. But, being the crock pot lover that I am, I thought I would be a genius and try it in there – turns out, it’s already been done. Y’all even told me that in the spaghetti squash post. I believe the Bible says, “there is nothing new under the sun
” and dude, the Bible is always right. [Read more…]

Crock Pot Cheesy Chicken and Zoodles

This Crock Pot Cheesy Chicken and Zoodles recipe is perfect for when you'll be out of the house all day! Prep your zoodles ahead of time and you'll be good to go!

I’m not gonna lie – I’m running a weeeeeeeeeeeeeeee bit behind this week. Not with anything except blog work, which is a huge bonus. Yay for scheduling!

So, I don’t have time for a long and elaborate post – it’s already 6am and I need to make breakfast, finish yogurt, and pack lunch. Sooooooooooooooooo, here is your short, condensed version of Cheesy Chicken and Zoodles.

It was easy. It was yummy. It was even yummier left over. It should have been 6 servings, but we really liked it and it was only 4. *Burp* Oops? [Read more…]

Crock Pot “Beenie Weenies”

When I was growing up, Beanee Weenees were a novelty item
Mama bought them sometimes, but not a lot. And I know why now. Have you SEEN how much those little boogers cost? It’s outrageous. I mean, it’s BEANS AND WEENIES IN A CAN! It’s not exactly caviar. You can’t blame that on inflation because IT’S BEANS AND WEENIES IN A CAN
which are still cheap foods even 30 years later. I have renamed this recipe to Beenie Weenies – so you won’t confuse the two. 😉 Plus, it’s how I like to spell it. The two EEs are just weirdo.

Mostly my mom would just make her own Beanee Weenees (see, it’s weird) and she still does that for us sometimes. She would cut up hotdogs and mix them with cans of Pork ‘n Beans. To this day, I still love them. My Grandmaw would always keep cans of them for the kids – and my Papaw
but sometimes you just get things at grandma’s house that you don’t get anywhere else. It’s like Vegas.
