Once upon a time there was a mom. She was trying to make a tasty treat in the oven. Everything was going fine…but then the baby had a poop – and it got EVERYWHERE. While cleaning up the poop (which she’s not afraid of), someone also came to the door. That mom chatted with the company for a while. Company left – then the 3 year old had a meltdown. Crock Pot Red Chicken with Spinach

I dreamt this recipe up in my sleep. Actually, I probably wasn’t asleep. It was probably 3:30am and I was nursing. I do a lot of thinking while I nurse – and reading. But it’s hard to read in the dark, so I think about food instead.

This is a take off an Italian dish that my roommate Niki used to make in college – except it involved beef….and cream cheese. So, yeah – maybe this is way different, but still it’s where the idea started. Does anyone else’s thoughts start in one place and end up somewhere else? Crock Pot Creamy Turkey and Quinoa

Remember that kickin’ awesome recipe I posted for Jerked Beef Stew? I said that I thought it was totally awesome, but Barry was just ā€œokayā€ with it? Well, now the tables have turned. I was just ā€œokayā€ with this dish but he LOVED IT!!!

I have a love/hate relationship with ground turkey, like I told you in the Sausage Patties post. I like ground turkey in some stuff and in other stuff it gives me the gag reflex. I hate the smell of it cooking. And I’ve discovered that I can tolerate the 93/7 fat but NOT the 85/15. Crock Pot Jerked Beef Stew

I’m gonna be honest – this is gonna be a quick post…because after all, aren’t you mostly here for the recipe? At 7 months old, we’re still struggling to find a routine for Andy – mainly, he won’t sleep. Naps are like 30 minutes and he’s up a lot during the night. Mama tired, y’all. Any minute now he’s going to wake up…so, let’s do this thing.

I love tender chunks of beef. So, Beef Stew ranks pretty high in my book…but I like to defer for normal recipes and try new things. Barry thinks I should just leave good food alone, but I can’t help it. Crock Pot Texas Pork Chops

I’ve traveled to Texas with Barry a few times, and let me tell you something – I love it there! I’ve never been west of Texas…but that’s okay with me because Texas is where it’s AT. Barry and I have both agreed that if we had to live anywhere else besides here (and I love it here, so it would take a LOT to get me to move), it would be Texas.

Everything is bigger in Texas…so don’t buy any pansy pork chops for this dish. Are you a busy family?

How would you like 6 chicken recipes that can be assembled in less than one hour, and cost well under $100, especially if you have a stocked pantry?

These recipes couldn’t be simpler – assemble the raw ingredients ahead of time in freezer bags then freeze.Ā  Thaw in your refrigerator the night before cooking and throw the contents in the crock pot, 6 hours on low or 4 hours on high. Ā (Always check for doneness as all crock pots are different.)

When it comes to the amount of ingredients for these recipes let the size of your crock pot be your guide.Ā  If you have a 4 quart crock pot and are using gallon-size freezer bags, be sure to leave some room in your freezer bag so everything will fit and cook well in your crock-pot. [Read more…]

Crock Pot Sweet Potato Meatloaf

I love all kinds of meatloaves, but this Crockpot Sweet Potato Meatloaf may be my most favorite one yet! The sweet potato makes it so moist and yummy!

I have this thing for meatloaf and meatballs…that should be apparent by my myriad meatloaf recipes on here (ie. Cheeseburger Meatloaf and Meatloaf with Carrots and Potatoes being my two favorites). But this Sweet Potato Meatloaf… y’all. It’s a home-run.

Where some women can’t say no to chocolate, I can’t say no to meatloaf. It’s bad…really bad.Ā What’s worse is if it’s a meatball.Ā I might be stuffed silly from 8-10 large meatballs…but that little meatball will look at me and say ā€œHey…I’m just a little ole thing – you can eat one more.ā€ And I do.
