Glazed Carrots

Sometimes I come across reduced carrots at Food City and I have to buy them. I cannot leave those poor little $.50 carrots on the shelf. They need a home. I have a home, so they come live with me…….in my belly. They’re not really pretty to look at. Only a mama could love them. But I’m going to turn them into a thing of beauty – Annie’s favorite vegetable, Glazed Carrots. So, the next time you see some poor ole dry carrots just think of the possibilities! Of course, this works for nice, pretty carrots too, but they can easily find a home and I like to take in strays.

This is so simple you’ll just be amazed. You need butter, sweetener, and water….oh, and carrots. I’m just keepin’ it real…..simple.

In a saucepan, melt the butter and add the sugar and water. Please use real butter. Thank you.  You won’t be sorry.

When the butter is melted and you’ve mixed in the other stuff, add the carrots. Stir them around a little bit and then put the lid on. You’ll want to leave your heat at about medium to medium/high so that the mixture starts to boil and continues to boil. Stop gawking at my ugly pot. I like it…..only a mother could love it.

I took the lid off to show you. It’s boiling. We want to boil all the liquid away. So, this is a project you do while you’re making dinner…..don’t walk away and watch Dr. Phil or something. Stay in the kitchen unless you like burned carrots. You can stir frequently and you’ll want to in order to coat the carrots with the good stuff. Get a book and stand beside your pot.

It will take about 30-40 minutes for all the liquid to boil away. Mine usually take around 30 minutes. Keep stirring so you don’t burn them to the bottom of the pot and have to scrub them with steel wool…….or so I’ve heard that could happen – from OTHER PEOPLE. *Cough* When the liquid is gone and the carrots are tender, you’re done! Ta da!

I told you these were Annie’s favorite, right? When I cut up her carrots and put them on the table, she ran to her seat and got in it herself…..reaching very far to get to her carrots. And she ate them (not the sandwich of course) while I finished dinner. She’ll have good eyesight for sure.

So there ya have it. Stacy’s Glazed Carrots. They’re very easy and very delicious. I like serving them when I have company – then they think I’m a culinary genius. I hide the pot if it got burned. *Cough*

Stacy’s Glazed Carrots

  • 2 tablespoons butter
  • 2 tablespoons sweetener
  • ¾ cup water
  • 1 pound carrots – baby or regular cut into 1 inch pieces
  1. Melt butter in a medium saucepan.
  2. Add sweetener and water.
  3. Add carrots, stir, and bring to a boil.
  4. Put on lid and let boil over medium heat until all the liquid is gone.
  5. Stir occasionally to cover carrots with mixture. Should take 30-40 minutes total.
  6. Give one last stir to coat evenly and serve. Yummo!

    I love your pot! My mom has the same brown ones and my mother-in-law has green ones–both wedding gifts from the late 70s/early 80’s. 🙂 Thanks for the recipe-i’m looking forward to using it next time I find carrots in the fridge that I’d forgotten about.

    I love the way you make them! I’m going to try it. I typically just steam the carrots until tender, drain off the water, then add melted butter, maple syrup (or sucanat) and a dash or two of pumpkin pie spice. I like your way because the carrots would really soak up all the yummy-ness all that much MORE! Thanks!
