You know how you have those pivotal moments in life? Moments that you remember with astonishing clarity? In my life, I have a few of those moments. One of them was all about Cornbread Salad. I remember where I was, the table, my plate… I remember it all. That Cornbread Salad changed my life. From hence forth, I was a Cornbread Salad connoisseur.
Snickers Oatmeal
This was another one of my acts of culinary genius – mostly out of desperation one morning for breakfast. As you know, I love oatmeal and we eat a lot of it around here…but some mornings, a girl needs to get her chocolate on. So, Snickers Oatmeal was born.
Did you know that I love Snickers bars? Mostly those little miniature ones you get at holidays. That way I can eat a couple and not feel any guilt – unlike if you eat a WHOLE bar and then you’re like, “Whoa, what just happened here?” Eating mini ones means, “I only ate a few of those little ones.” And you can’t tell me I’m the ONLY person that does that. Don’t lie to me.

If you are a new follower of the blog, you might be wondering…what is KonMari? KonMari is another name for decluttering and it is actually not really a new thing. It originally became a trend when Marie Kondo published her book The Life-Changing Magic of Tidying Up in 2014. The idea of the KonMari style of decluttering has just resurfaced lately thanks mostly to the TV show on Netflix. But Barry and I started our journey with KonMari over 4 years ago and we owe a lot of thanks to Marie Kondo and her book. We really did experience some great lessons learned from decluttering.

Today, I’m going to tell you how to cook steel cut oats to make baked oatmeal!
Basic Baked Overnight Oatmeal is one of the most popular recipes on my blog. It’s been a family favorite for years and you all seem to love it just as much as we do. Using that basic recipe, you can make approximately 1.5 million tweaks and make it different almost every time! I love variety. 🙂

Have you ever had a case of “the blahs”? You know – that sinking, sad, yucky feeling that just drags you down? Worse yet – do you have the blahs now? What in the world can you do about that feeling when you don’t have a say in the weather forecast and Spring is still several weeks away?
[Read more…]Crock Pot Cheesy Sausage Rotini
This isn’t my normal crock pot style of recipe. Most of the time you’ll find me using recipes that cook at least 4 hours and most of the time mine run about 8 hours. Honestly, I want my food to cook for 8 hours so I’ll have 8 hours to do stuff – 8 hours to go away, to clean, to be free from dinner, or maybe just so I’m less likely to burn it to a nasty, crusty mess. But this cheesy sausage rotini is one of those pasta recipes that is a little different.
You’ll find this particular dish only takes 2-3 hours. So, what on earth is the point? You could easily make this on your stovetop and be done in 30 minutes. But maybe you shouldn’t…
[Read more…]Crock Pot Corn Chowder
The idea for this crock pot corn chowder recipe came from a church cookbook. Seeing as how I have about 20-30 of them, I get lots of ideas there. 🙂 Some of the ideas turn out good. Some of them don’t turn out at all and I have to scrape them out with the assistance of a chisel and a sledgehammer.
I used to feel bad about this fact – until I read that most great chefs get their groundbreaking ideas from something they see somewhere else. They just put their spin on it, add something new, or use a different technique. So, if a chef can do it, so can I! Take a seat, Chef Boyardee! After all, no recipe will ever come out that hasn’t been made before. I just have to “Stacify” them.

I’ve been a work-at-home mom for the past ten years. I remember this because one of my very first posts on the blog was about throwing a bubble-themed birthday party for my oldest daughter. It has been a big learning experience, but I have found working at home suits me (and our family) really well. With the right attitude, the right office setup, and the right resources, working at home is something that may just work for you as well. I’ll share toward the end of this post about my actual workspace, and tell you about the desk and chair I recently received from Autonomous, the sponsor of today’s post. If you prefer to watch a video about this, jump over to my YouTube channel where I just posted a video about it.
With kids, what does working at home look like?

There is always a hunt for a healthy dessert recipe. But really, is dessert supposed to be healthy? Isn’t it supposed to be an indulgence that we have occasionally just for the sake of the pure enjoyment of food? Sure, it’s cool to say “Here is my apple, it’s my dessert.” But really, an apple is not dessert. You can say it’s dessert – it can stand in the place of dessert – but it’s no piece of chocolate cake. So let’s try a real dessert recipe that’s actually somewhat healthy(ish) – oatmeal peanut butter bars.
