You know those moments of pure genius you have in the kitchen? You’re just standing around and suddenly think “Oh. My. GOSH! I could totally make yadda yadda!!!” Well, I have those a lot. The problem is, about half the time, they turn into utter disasters. Now, I do usually eat the utter disasters, including the pancakes that wouldn’t ever get firm, the cookies that were so bitter it would give you chest hair, and the “muffins” I had to eat like cereal out of a bowl. I just hate to waste food…but sometimes, I just can’t help it. Sometimes, even the dog won’t eat it. Just picture it with me: peanut butter brownie pizza. What could go wrong?!

Barry, my kids, and I all love homemade waffles! It’s one of their favorite meals – and they’ll enjoy them any time of day. I have a really large double-side waffle maker. It’s a Waring Pro. But then I found this cute, smaller one for four waffles. I only paid $15 for it and I know it’s not the best quality, but I’ve had so much fun with it! So…let’s make waffles!
Whenever I make waffles, I either make the Lemon Honey Flax Waffles from Jessica Fisher’s cookbook or I modify the waffle recipe from the red Breadbeckers cookbook. I have practically all their cookbooks, but I love the recipes from the little red book. I modify one called Basic Pancake recipe and convert it to waffles. The only real change between pancake and waffle batter is that you add more oil to the waffles.

It should come as no surprise that I love oats. Hardly a day passes where I don’t have it in some shape or fashion, be it in traditional oatmeal, smoothies, or granola. Speaking of “passes,” ahem – you should be eating it more often if you’re having problems with “passes.” Hahahahahaha! Oatmeal recipes are everywhere, but not all of them are good…let’s just be honest.
Is there such a thing as too many oatmeal recipes? NO! I even have oatmeal as its own Pinterest board.

With the popularity of my 100 Days of No Processed Foods: Crock Pot Style post, I’ve realized there is a huge need and desire for crock pot recipes that don’t call for pre-packaged foods. When glancing through Pinterest, it’s evident that most crock pot recipes call for mixes, boxes, and cans of stuff from the grocery store. That’s why I so enjoy posting wholesome, whole-food crock pot recipes each Friday.
I got an idea in my head that wouldn’t go away. I have a dream – my dream is a huge list and resource of crock pot desserts that don’t call for cake mix, pudding, and canned pie mix. I’m really enjoying cooking through my cookbook stash…and there doesn’t seem to be an end in sight. Especially when you consider that I have eBook cookbooks as well. Is there such a thing as a cookbook hoarder? On the next TLC: Cookbook Hoarders – Try to pry those cookbooks from their cold, dead fingers.

Monster Cookies
Why do they call them Monster Cookies? I’ve made them several times and my mom used to make them occasionally when I was little, but I still don’t know the answer. Is it because it makes a monstrous amount? No – that can’t be it…4 ½ dozen isn’t exactly a monstrous amount (at least not to me). Is it because they’re large in size? Well, maybe…but I make mine in tablespoon amounts – so it’s only a monster sized cookie if you’re a dust particle.

4 Ingredient No-Churn Pumpkin Ice Cream
In the spirit of keeping it real, let me tell you… bombed a recipe. Well, not really BOMBED – as in, setting on fire. But the recipe was sub-par and I don’t post sub-par recipes. It’s the perfectionist in me, which sometimes needs to take a hike.
I wanted to show y’all how you can use your blender for all kinds of things – besides smoothies! – and tried a recipe for Raw Cinnamon Bun Bites from my Blendtec blender cookbook. But when I switched some of the ingredients… it just didn’t turn out super yummy.

Pumpkin Pie with Gluten Free Flax Crust
In my misspent food youth, I was dumb. I didn’t eat certain things. Stuff like salad, cabbage, and salmon were off my radar. Man, how dumb is that? If I could go back and talk to myself, I would smack Misspent Stacy around a little bit.

Crock Pot Cocoa Almonds
You know those cocoa dusted almonds you can buy at the store? Yeah – they’re stinkin’ delicious.
When I give them to Annie, she acts like I’ve handed her the moon – and I’m the best mommy EVAH. Cool feeling…not so cool of a feeling when they’re all gone though. Bummer.
Also, it’s not so cool when you read the ingredient label. Yeah. Save yourself and don’t read it. Thanks.
I’ll just tell you that you probably don’t want to know what’s in there. DUDE! They’re COCOA ALMONDS…why do you need to add all that other mess??

Crock Pot Sweet Apple Chutney
When I was pregnant with Annie, I went hog wild and pig crazy over apples. I ate them every day. Yes, plural. Sometimes three a day. I couldn’t get enough. Now, apples and applesauce are one of her favorite foods. With Andy, it was bananas. I would have attacked you over eating my banana – and he LOVES them now too. It’s a good thing I didn’t gorge myself on Skittles and Doritos.
I still love apple dishes. If I come across a recipe with “apple” in the title, I’m always gonna read it. As much as I love them, I don’t care for traditional apple chutney. It usually includes chopped onion and vinegar. I’m sorry, but I just cannot do that with my apples. It seems wrong to me – like I’m cheating on caramel or something. [Read more…]
