We’ve looked at a crumble and today we’re meeting our friend Crisp. What’s the difference? Oats. Yep, that’s all. A crisp’s topping is more granola-like and can include coconut or nuts. So, if you’re looking to get your fiber in for the day, go for a crisp over a crumble. My favorite crisp is apple, but Barry likes pears so that’s what I went for with this recipe….and I made them mini. If you want to do a regular sized crisp, just use an 8 inch square pan. Cinnamon Blackberry Crumble

Well, if you’ve ever wondered, “What the heck is pandowdy?!” then the next few weeks are for you! I’ll uncover several different fruit desserts and tell you what they are…..then you can tell your friends and they’ll think you’re a culinary genius! Today we’re making a Crumble – Cinnamon Blackberry Crumble. A crumble begins with a fruit on the bottom. It’s given a topping that consists of flour, sugar, and butter – a streusel. The three are mixed together until “crumbly” and then sprinkled on top of the fruit. It will give the topping a cookie-like taste. Crock Pot Lava Cake

Easy Cinnamon Rolls
***UPDATE – See this post about our new eating habits. (7/10/11) I found myself with an overabundance of crescent rolls that I needed to get rid of. I also found myself with a craving for cinnamon rolls. How convenient! I love when stuff like that happens. These little gems are so quick you’ll be totally amazed. Your kids will think you hung the moon when you tell them you MADE cinnamon rolls instead of BAKED them. Well, you baked them too. Hmmm. Nevermind. If you stockpile, you MIGHT find yourself with an overabundance of pancake mix. Yes, it’s true. Sometimes you cannot eat enough pancakes to keep your stock from running over. And let me tell ya, we eat a LOT of pancakes. So, I was thinking……what can I do with all this pancake mix? Muffin Mix Pancakes

Pancakes made from muffin mix are really quick and easy. And the flavor possibilities – oh my!!!! You could have Strawberry Pancakes, Chocolate Chip Pancakes, Honey Bran Pancakes, or Lemon Poppy Seed Pancakes, and on and on and on. Or, you could make this version – Blueberry Cheesecake Pancakes. Grape Salad

Black Bean Burgers – Take Two
I have a Black Bean Burger recipe on this site already…and I almost deleted it. Why? A Facebook friend posted this lovely recipe and I had to try it. Now, Barry and I don’t eat veggie burgers because they’re good for you. Yes, they are good for you….but we just like them. We are not vegetarians. We love pigs. So, I tried this new recipe and it was DIVINE! I told Barry I was going to delete my old one because it was inferior to this masterpiece. He said no. So, I didn’t. This new burger is full of cilantro, so if you don’t care for that (weirdo!) then you’ll want to stick with my other recipe. Let’s get healthy…..or get gas…..or maybe both, who knows. [Read more…] |
Tuna Melts
Okay, I realize that most people shudder when they think of tuna……..I, on the other hand, LOVE tuna. My mom used to make tuna salad for me all the time when I was growing up, so I just love it. When the doctor first told me I could feed Annie fish, I immediately came home and fixed tuna for lunch. Bingo. She loved it too! Like mother, like daughter – except for that whole hard-headed part. I have NO IDEA where she gets that one. Tuna is quick and versatile. You can make a lot of quick dishes using it, so it obviously fits in with this week’s theme. Add that it’s Fishy Friday in the Myers household and this was an obvious choice. Before you write it off, just make it and try it…….you might surprise yourself. Cheese covers a multitude of sins. Meatloaf in a Mug
See this plate? It was ready in 15 minutes. Ok, so my mom had already made the sweet potato casserole, but that doesn’t count. The veggies and the meatloaf were ready in less than 15 minutes. Wait! Doesn’t meatloaf normally take an hour? Who wants to wait an hour for a delicious hunk of meat? Add some ketchup and I definitely don’t want to wait! This meatloaf is made in a mug….in your microwave……in about ten minutes. Are you shocked? If you want a fast dinner, just go to your microwave. What did we do before the microwave? Gosh. I don’t want to think about it. It was the dark ages. Scary! Take away everyone’s microwave and we’d all pretty much be up a creek without a paddle. Sorry – I didn’t mean to interject that nightmare into your life. Don’t go to bed in the next few minutes. Let’s make meatloaf instead – in 15 minutes! [Read more…] |
